Southwest Frittata
Ingredients
- 8 eggs
- 1 cup bell pepper
- ½ cup white onion diced
- 1 tbsp jalapeño minced
- ¼ cup cilantro chopped
- sea salt to taste
Instructions
- PREHEAT oven to 350° and spray a 10 inch pan with nonstick cooking spray.
- WHISK eggs in a large bowl. Stir in vegetables and cilantro. Season with sea salt. Pour into pan.
- BAKE for 30-35 minutes. Allow frittata to cool slightly. Gently slide off pan and onto a plate. Slice into 4 pieces.
