Ingredients

  • 3 strips bacon diced (uncured, thick cut)
  • 1 cup mushrooms diced
  • 3 cups cauli rice
  • 1 tbsp chia seeds
  • 1 cups unsweetened almond milk
  • 2 cups kale finely chopped
  • 1 tbsp nutritional yeast
  • Sea salt and black pepper
  • ½ medium avocado
  • Hot sauce optional

Instructions

  • HEAT a large pan over medium heat and fry the bacon until crisp.
  • ADD the mushrooms and sauté for 3-5 minutes, until they begin to brown.
  • ADD the cauli rice and continue cooking for 2-3 minutes.
  • STIR in the almond milk, chia seeds, and kale. Reduce heat to medium-low and simmer for about 5 minutes, until the kale has wilted and most of the almond milk has been absorbed.
  • REMOVE from heat, stir in the nutritional yeast, and season with salt and pepper to taste.
  • TOP with sliced avocado and hot sauce.
