HEAT a large pan over medium heat and fry the bacon until crisp.
ADD the mushrooms and sauté for 3-5 minutes, until they begin to brown.
ADD the cauli rice and continue cooking for 2-3 minutes.
STIR in the almond milk, chia seeds, and kale. Reduce heat to medium-low and simmer for about 5 minutes, until the kale has wilted and most of the almond milk has been absorbed.
REMOVE from heat, stir in the nutritional yeast, and season with salt and pepper to taste.
