Jamaican Jerk Pork w/ Pineapple Fried “Rice” – FULL CAL

Ingredients
- 10 oz pork loin
- 1 tbsp olive oil
- 2 tsp Jamaican jerk seasoning
- 1 tbsp lime juice
- ¼ cup fat free beef stock
- 1 tbsp ghee
- 3½ cups cauli rice
- ¾ cup carrot shredded
- ½ cup green onion thinly sliced
- ¾ cup pineapple diced
- ½ cup frozen peas
- Sea salt and black pepper to taste
Instructions
- SET Instant Pot to sauté mode and heat olive oil.
- SEASON the pork all over with jerk seasoning and brown in the Instant Pot for about 2-3 minutes per side.
- ADD the lime juice and beef stock and cook on high pressure for 25 minutes. When done, use two forks to shred the pork.
- FOR the rice, heat the ghee in a large pan over medium-high heat.
- ADD the shredded carrot, sliced green onion, diced pineapple, and frozen peas and sauté for 2-3 minutes.
- ADD the cauli rice, season with salt and pepper, and continue sautéing for 4-5 minutes, until the rice has softened.
- SERVE the shredded pork over the cauli rice.
