Instructions
SET Instant Pot to sauté mode and heat olive oil.
SEASON the pork all over with jerk seasoning and brown in the Instant Pot for about 2-3 minutes per side.
ADD the lime juice and beef stock and cook on high pressure for 25 minutes. When done, use two forks to shred the pork.
FOR the rice, heat the ghee in a large pan over medium-high heat.
ADD the shredded carrot, sliced green onion, diced pineapple, and frozen peas and sauté for 2-3 minutes.
ADD the cauli rice, season with salt and pepper, and continue sautéing for 4-5 minutes, until the rice has softened.
SERVE the shredded pork over the cauli rice.
