Java Muffins
Ingredients
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/3 cup Swerve
- 1 tbsp instant coffee granules *
- 3 large eggs
- 1/3 cup unsweetened almond milk
- 1 tbsp coconut oil melted
- 1 tsp baking powder
- 1/8 tsp sea salt
Instructions
- PREHEAT oven to 325 and line 6 muffin tins with paper liners
- IN a small mixing bowl, whisk together dry ingredients. In a separate large mixing bowl, whisk together wet ingredients. Gradually stir dry ingredients into wet to form a batter.
- SCOOP batter into tins and bake for 20-25 minutes.
Notes
*Optional. Without coffee, tastes like simple chocolate muffin! Yields 6 muffins
