  • 10 oz pork loin
  • 2 tsp Jamaican jerk seasoning
  • 1 tbsp lime juice
  • ¼ cup fat free beef stock
  • 1 tsp ghee
  • cups cauli rice
  • ½ cup carrot shredded
  • ½ cup green onion thinly sliced
  • ½ cup pineapple diced
  • ¼ cup frozen peas
  • Sea salt and black pepper to taste


  • SET Instant Pot to sauté mode.
  • SEASON the pork all over with jerk seasoning and brown in the Instant Pot for about 2-3 minutes per side.
  • ADD the lime juice and beef stock and cook on high pressure for 25 minutes. When done, use two forks to shred the pork.
  • FOR the rice, heat the ghee in a large pan over medium-high heat.
  • ADD the shredded carrot, sliced green onion, diced pineapple, and frozen peas and sauté for 2-3 minutes.
  • ADD the cauli rice, season with salt and pepper, and continue sautéing for 4-5 minutes, until the rice has softened.
  • SERVE the shredded pork over the cauli rice.
