  • 12 oz ground turkey
  • ½ tsp dried tarragon
  • ½ tsp oregano 
  • 1 tsp salt
  • ½ tsp garlic powder 
  • black pepper to taste
  • 1 cup beets julienned
  • 1 cup rainbow carrots or regular carrots julienned
  • ¼ cup feta cheese crumbled
  • 3 tbsp pine nuts toasted


  • 2 tbsp olive oil
  • 4 tbsp Red wine vinegar
  • 1 tbsp Dijon mustard
  • ¼ tsp salt
  • 1 tbsp fresh thyme


  • HEAT a large skillet over medium-high heat, add the ground turkey, season with the tarragon, oregano, garlic powder, salt, and pepper, and cook until lightly browned, about 6-8 minutes.
  • ADD the olive oil, red wine vinegar, Dijon mustard, salt, and fresh thyme to a small jar and shake until well combined.
  • COMBINE the beets, carrots, feta cheese, pine nuts, and cooked turkey in a large bowl and mix well.
  • DIVIDE into two portions and dress each portion with 2 ½ tbsp of the dressing.
