High Protein Golden Beet Salad w/ Ground Turkey – FULL CAL
Ingredients
- 12 oz ground turkey
- ½ tsp dried tarragon
- ½ tsp oregano
- 1 tsp salt
- ½ tsp garlic powder
- black pepper to taste
- 1 cup beets julienned
- 1 cup rainbow carrots or regular carrots julienned
- ¼ cup feta cheese crumbled
- 3 tbsp pine nuts toasted
DRESSING:
- 2 tbsp olive oil
- 4 tbsp Red wine vinegar
- 1 tbsp Dijon mustard
- ¼ tsp salt
- 1 tbsp fresh thyme
Instructions
- HEAT a large skillet over medium-high heat, add the ground turkey, season with the tarragon, oregano, garlic powder, salt, and pepper, and cook until lightly browned, about 6-8 minutes.
- ADD the olive oil, red wine vinegar, Dijon mustard, salt, and fresh thyme to a small jar and shake until well combined.
- COMBINE the beets, carrots, feta cheese, pine nuts, and cooked turkey in a large bowl and mix well.
- DIVIDE into two portions and dress each portion with 2 ½ tbsp of the dressing.
