High Protein Raspberry Chicken w/ Green Beans – LOW CAL
Ingredients
- 6 oz chicken breasts boneless skinless
- 1 tsp coconut oil melted
- ½ cup fresh raspberries or frozen and thawed
- 1 tsp stone ground mustard
- ½ tsp salt
- 1 tbsp balsamic vinegar
- 2 cups green beans
- 1 tsp olive oil
- Sea salt and black pepper
- 1½ tbsp slivered almonds
Instructions
- PREHEAT oven to 375°F.
- COMBINE the coconut oil, raspberries, mustard, salt, and balsamic vinegar in a small bowl and use a fork to mash and mix until well combined.
- COAT the drumsticks in the raspberry mixture and place on a baking sheet that’s been lined with foil. (If using chicken breast, coat with the raspberry sauce and wrap in foil to prevent it from drying out.)
- BAKE the drumsticks or breasts for 25 minutes, turn and bake an additional 20 minutes.
- TOSS the green beans with olive oil and season to taste with salt and pepper. If using drumsticks, add the green beans when you turn the drumsticks at the 25 minute mark. If using breasts, everything can go in the oven at the same time.
- AFTER 10 minutes, toss the green beans, sprinkle with the slivered almonds, and return to the oven for another 10 minutes.
- REMOVE everything from the oven and enjoy.
