High Protein Picadillo – LOW CAL
Ingredients
- 10 oz lean ground beef (93%)
- ¾ cup yellow onion diced
- 2 tsp garlic minced
- ¾ cup butternut squash diced
- ½ cup red bell pepper diced
- 1 cup green bell pepper diced
- 1½ cups fire roasted tomatoes diced
- ½ cup water
- 3 tbsp green olives sliced
- 2 tbsp raisins
- 1 tbsp apple cider vinegar
- 2 tsp dried oregano
- 2 tsp paprika
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp salt
- 3 cups riced cauliflower
Instructions
- PREHEAT a large skillet over medium-high heat.
- BROWN the ground beef for 2-3 minutes then add the onion, garlic, butternut squash, and red and green pepper.
- SAUTE for about 5 minutes, until the onion and peppers begin to soften.
- STIR in the remaining ingredients, reduce heat to medium-low, cover, and simmer for about 20 minutes, until the butternut squash is tender and most of the liquid has evaporated.
- SERVE over 1 ½ cups steamed or lightly sautéd cauli rice.
