Ingredients

  • 8 oz shrimp peeled and deveined
  • 2 tsp olive oil
  • 2 tbsp shallot minced
  • 2 tsp garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 2 tbsp lemon juice
  • cup white wine
  • 1 tbsp butter
  • 4 cups zoodles
  • oz kalamata olives roughly chopped (About 10-12 olives or ¼ cup chopped olives.)
  • 2 tbsp chives
  • 2 tbsp parsley finely chopped

Instructions

  • HEAT the olive oil in a large pan over medium heat.
  • SAUTE the garlic and shallot for about 2 minutes, until softened.
  • ADD the shrimp and season with salt and Italian seasoning. Continue sautéing for another 2 minutes.
  • STIR in the lemon juice and white wine, increase heat to medium-high, and simmer for 2-3 minutes to allow the wine to cook off.
  • STIR in the butter, zoodles, and olives. Cook for 2-3 minutes, until the zoodles have softened.
  • REMOVE from heat, divide into two portions, and top each with 1 tbsp chives and 1 tbsp parsley.
