Ingredients

  • 2 cups kale chopped
  • 3 eggs
  • 1 tbsp curry paste or sub 1.5 tsp curry powder
  • 1 tsp butter

Instructions

  • WHISK together eggs and curry paste until smooth. Stir in kale.
  • MELT butter in a medium skillet over medium/low heat. Pour in egg/kale mixture and cover. Cook 3 minutes. Use a wooden spatula to break up mixture and stir. Cover and cook an additional 3 minutes. Serve hot.
