Curried Eggs and Kale
- 2 cups kale chopped
- 3 eggs
- 1 tbsp curry paste or sub 1.5 tsp curry powder
- 1 tsp butter
- WHISK together eggs and curry paste until smooth. Stir in kale.
- MELT butter in a medium skillet over medium/low heat. Pour in egg/kale mixture and cover. Cook 3 minutes. Use a wooden spatula to break up mixture and stir. Cover and cook an additional 3 minutes. Serve hot.
