Gluten-Free Shrimp Scampi w/ Zoodles – LOW CAL
Ingredients
- 8 oz shrimp peeled and deveined
- 2 tsp olive oil
- 2 tbsp shallot minced
- 2 tsp garlic minced
- 1 tsp Italian seasoning
- ½ tsp salt
- 2 tbsp lemon juice
- ⅓ cup white wine
- 1 tbsp butter
- 4 cups zoodles
- 1½ oz kalamata olives roughly chopped (About 10-12 olives or ¼ cup chopped olives.)
- 2 tbsp chives
- 2 tbsp parsley finely chopped
Instructions
- HEAT the olive oil in a large pan over medium heat.
- SAUTE the garlic and shallot for about 2 minutes, until softened.
- ADD the shrimp and season with salt and Italian seasoning. Continue sautéing for another 2 minutes.
- STIR in the lemon juice and white wine, increase heat to medium-high, and simmer for 2-3 minutes to allow the wine to cook off.
- STIR in the butter, zoodles, and olives. Cook for 2-3 minutes, until the zoodles have softened.
- REMOVE from heat, divide into two portions, and top each with 1 tbsp chives and 1 tbsp parsley.
