Low Carb Savory Cauli Oats – LOW CAL
Ingredients
- 2 strips bacon diced (uncured, thick cut)
- 1 cup mushrooms diced
- 3 cups cauli rice
- 2 tsp chia seeds
- 1 cups unsweetened almond milk
- 2 cups kale finely chopped
- 1 tbsp nutritional yeast
- Sea salt and black pepper
- ¼ medium avocado
- Hot sauce optional
Instructions
- HEAT a large pan over medium heat and fry the bacon until crisp.
- ADD the mushrooms and sauté for 3-5 minutes, until they begin to brown.
- ADD the cauli rice and continue cooking for 2-3 minutes.
- STIR in the almond milk, chia seeds, and kale. Reduce heat to medium-low and simmer for about 5 minutes, until the kale has wilted and most of the almond milk has been absorbed.
- REMOVE from heat, stir in the nutritional yeast, and season with salt and pepper to taste.
- TOP with sliced avocado and hot sauce.
