kalamata olives
roughly chopped (About 10-12 olives or ¼ cup chopped olives.)

Instructions
HEAT the olive oil in a large pan over medium heat.
SAUTE the garlic and shallot for about 2 minutes, until softened.
ADD the shrimp and season with salt and Italian seasoning. Continue sautéing for another 2 minutes.
STIR in the lemon juice and white wine, increase heat to medium-high, and simmer for 2-3 minutes to allow the wine to cook off.
STIR in the butter, zoodles, and olives. Cook for 2-3 minutes, until the zoodles have softened.
REMOVE from heat, divide into two portions, and top each with 1 tbsp chives and 1 tbsp parsley.
