PLACE the pork chops in a large zip-top bag. Combine the lemon juice, zest, olive oil, minced garlic, and spices in a small bowl and mix until well combined. Pour the marinade over the pork chops, seal, and refrigerate for 2-3 hours.
PREHEAT the grill and coat the grates with non-stick cooking spray. Grill the pork chops for about 3-5 minutes per side (depending on the thickness), until the internal temperature reaches 145 °F. (Alternatively, the pork chops can be cooked in a large skillet for 3-5 minutes per side or baked in the oven at 350 °F for 25-30 minutes.)
REMOVE from the grill and allow to rest for about 3 minutes before serving.
